Rolls & Spice Cake

Just a quick post to rest my feet actually! I have been in the kitchen FOREVER it feels like. I made Raisin pie (I do NOT like it but it is my mom's favorite), Spice Cake, Cream Cheese Frosting, Shredded Pork Tenderloin BBQ, Fruit Salad, Spinich Dip, Buns, and 50!! dinner rolls (all today). I was able to borrow my neighbors bread machine so I had 2 going, plus hers is a 2 pound loaf...mine is one. Here is what I did with them. I started with Niki's bun recipe...there is none better...and then I rolled the dough into balls the size of large gumballs and put 3 in a greased muffin pan. There are 2 that have an extra little ball in them...a special 4 leaf clover roll!! Let them rise 45 min and bake for 20 at 350*. I also made a batch of sandwich sized buns to go with our pork tenderloin BBQ tonight.

I made my FIRST cake from scratch. It looks and smells wonderful. How great is it to lick beaters before breakfast!!! Here is the recipe I used.
Spice Cake
1/4 cup butter
2 eggs
2 c all purpose flour
1 1/2 t baking powder
1 t ground cinnamon
1/2 t baking soda
1/4 t ground nutmeg
1/4 t ground cloves
1/4 t ground ginger
1/4 c shortening
1 1/2 c sugar
1/2 t vanilla
1 1/4 cup buttermilk or sour milk (To sour milk, add 1 T lemon juice to milk and let sit 5 minutes)
Allow butter and eggs to stand at room temperature for 30 minutes. Meanwhile, grease a 13x9 cake pan. In a med bowl stir together flour, baking powder, baking soda and all spices. set aside.

In a mixing bowl beat butter and shortening with an electric mixer on med to high speed for 30 sec. Add sugar & vanilla. Beat until well blended. Add eggs one at a time mixing in between. Alternately add flour and sour milk to mixture mixing on low speed with electric mixer as you go. Pour into prepared pan. Bake at 350* for 35-40 min. The batter is much thicker and richer than box mixes.
Frost cool cake with Cream Cheese Frosting.
I used Dani's Cream Cheese Frosting recipe...it is as follows:
8oz. Softened cream cheese
1/2 c softened butter
1 t vanilla
3 c powdered sugar
1 Tbs milk
Using mixer, mix all ing
I need to seat 26 people tomorrow and think I have it figured out. There was a glitch however, as I can not find the Thanksgiving place cards...Hmmmmm, I think they were sloppy with gravy so I threw them out. I did not remember this til today! No nice place cards to decorate...thick construction paper and some Fall ribbon will have to do.Charlotte made the ones for the little kids.... Well it has taken me most of the day to do this post...little breaks here and there. It is time to eat dinner, and I am starving. I can feel my heartbeat in the soles of my feet from standing so much today. Thank goodness for Crocs! It all sounds wonderful, Bren! And your first "scratch" cake, too! You'll never enjoy a cake from a mix again!
